I don't think the definition is really that important, but I usually define data mining as Finding new and useful knowledge in data with the emphasis on useful. Typically, miners are concerned with the entire process of knowledge discovery, including the steps of

business problem definition
data cleaning
modeling
result interpretation
deployment
monitoring

(see www.crisp-dm.org for a nice summary of all the steps).

The machine learning methods usuallu look only at the modeling step, but the other steps are at least as important for the overall success.
